I managed to get behind the scenes. The Pastéis has been prepared for almost 180 years following the recipe of the Mosteiro dos Jerónimos (the Heironymite Monastery), in the legendary bakery. Every day, more than 20 000 pieces of the freshly made pastry make someone happy.
I collected the best dishes from what I have tasted this year. Geographically, it turned out to be a very diverse list, as well as with regards the flavours and styles. First, I selected the fine dining dishes, but it wasn't easy to narrow down my favourites.
